Jollof Rice.... (known as benachin ‘one pot’ in Wolof culture) can be traced back to the Jolof/ Wolof Empire (yes there was such a thing) in the Northwest region of Africa. People of Wolof #heritage speak French, English, Arabic and Wolof and are mainly in the Northwest region of Africa formerly called Senegambian (parts of Senegal, Gambia and Mauritania).

Still on Jollof… as it is one of the most mutually intelligible dish from Africa, there are minor differences in regional recipes and this has led to competitiveness in some regions. ‘Jollof Wars’.
